2013 Grenache - Black Oak Vineyard, Santa Barbara County

100% whole-cluster fermentation and pressed with an ultra-gentle stainless steel basket press in an 8-hour cycle. Fermented in small lots (2 tons) with native yeast only and year round barrel maturation at 55 degrees. One racking prior to bottling and no fining or filtering. Aged for 24 months in 100% neutral oak and 12 months in bottle. Only 81 cases produced. Red berry fruit, sweet black cherry, spice, dried flowers and leather with well integrated 100% whole clusters.

Production notes
  • Grapes were hand-harvested from 4 rows of sandy soil in Black Oak Vineyard in Alisos Canyon
  • 100% whole cluster fermentation in small lots (2 tons)
  • Like always, we relied on the native yeast that the grapes carried from the vineyards to complete the fermentation
  • We hand punched each fermentor twice a day to enhance the extraction of colors, tannins and flavors
  • After primary fermentation was complete we extended maceration for up to 30-35 days to further extract color, tannins and flavor
  • Pressed with ultra-gentle stainless steel basket press in an 8-hour cycle
  • Aged in neutral oak for 22 months prior to bottling, no fining or filtering with two rackings before bottling.and then another year in bottle prior to releasing.
